LEMON CURD TART W/STOOPID SIMPLE GRANOLA CRUST

Once you tart, you can’t stop! Fresh summer treat that makes my mouth water just writing about it. The beauty of this recipe is that most of the work is done for you. We call it Stoopid Simple, because its stupid simple.


The K.I.S.S. rule, keep it stupid, simple, or keep it simple, stupid states that most designs work best if they are kept simple. When it comes to recipes, thats never a bad thing.



What you'll need


1/3 Cup brown sugar

5-6 T Butter, melted

1 Pint of favorite store bought lemon curd





Step 1


Place Granola into food processor and pulse until resembles a fine meal or graham cracker crumbs. Place Granola crumbs into a bowl and add brown sugar and melted butter. Stir to combine.




Step 2


Place 1/3 cup of crumbs into mini tart pan and use bottom of measuring cup to pack crumbs into sides and bottom of pans.


Put the tart pans in freezer for 15 minutes to firm up. Remove from freezer and add desired amount of curd to each tart (about 1/3-1/2 cup)





Step 3


Place in fridge until ready to eat. Top with whipped cream and fresh fruit.





Serving


These are super tasty chilled and right out of the fridge, in my opinion. Eat them like a cookie. But if you've got company you can easily dress these things up to impress.
