Does anybody really like the taste of kale? Ok, maybe a few, but I'd argue that its only as good as the stuff you pair with it. Sure, it's "healthy" for you, but so are these pumpkin seeds, so you won't have to worry about adding a bunch to any salad. Kick your salad up a notch with our Spicy Tamari Roasted Pumpkin Seeds.

What you'll need
2 Sweet potatoes
1 Bunch of kale, torn into bite size pieces
3 Hard boiled eggs, sliced
3 Apricots, sliced or cubed
1 Avocado, sliced
1/2 Cup feta cheese crumbles
1 Cup sliced cucumber
1/4-1/2 Cup sliced pickled red onion
1/2 Cup Grizzlies spicy tamari roasted pumpkin seeds
1 t Smoked paprika
1/2 t Granulated garlic
1 t Salt
1/2 t Pepper
3 t Olive oil
TAHINI MAPLE DRESSING
1/4 Cup tahini
3 T Maple syrup
3 T Apple cider vinegar
1/4 Cup Olive oil
Juice from half a lemon
Salt and pepper to taste
Step 1
Preheat oven to 425 degrees. Cube sweet potatoes and coat with olive oil, smoked paprika, granulated garlic, salt, and pepper. Roast potatoes for 25 minutes, stirring occasionally.
Step 2
Whisk all dressing ingredients together in small bowl.
Step 3
Add all salad ingredients into bowl and toss with dressing.
